Cabbage Casserole | Amazing For Freezer Meals!

One of our favorite things to make and freeze is this tasty cabbage casserole!

This rich, delicious casserole is great for large families, and those who would like a healthier and lighter alternative to traditional casseroles. It also reheats very well in the oven as well as the microwave for quick and easy next-day meals.


Cabbage Casserole


Ingredients

  • 2 lbs. lean ground beef

  • 1 onion, chopped

  • 4 roma tomatoes, diced (or 1 can (28oz) diced tomatoes)

  • 4 lb head cabbage, chopped

  • 1 can of tomato paste

  • 1 cup uncooked white rice

  • 1 tsp garlic powder

  • 1 tbsp Italian seasoning

  • 2-3 cups of cheddar cheese

  • Salt + pepper, to taste


Directions


1. Preheat oven to 350F. Get a 9x13 pan ready for baking.


2. Brown beef and soften onion in a saucepan. Drain if needed.


3. Add tomatoes, tomato paste, rice, salt, pepper and, garlic powder. Slowly add 2 tomato paste cans worth of water to the pan.


4. Bring to a boil, then let simmer for 20-25 minutes or until rice is large and soft.


5. In a 9x13 pan, add ~1/2 the cabbage to the bottom of the pan. Layer about 1/2 the beef-tomato mixture on top of this, then repeat the process.


6. Cover with Aluminum foil, bake in the oven for 45 minutes.


7. Remove foil + bake with cheese for 15 minutes.


8. Let stand 5 mins, then serve!
